Soak
and cook the beans ahead of time.
In
an eight quart pot, saute onions, garlic, celery, bell pepper,
and dry ingredients in 2 Tablespoons of olive oil.
Add remaining two Tablespoons of olive oil and brown the
meat in pan with onions, spices, etc.
Add
pre-cooked beans, canned tomatoes, tomato sauce, tomato paste,
and remaining ingredients in pot.
Simmer for two hours stirring occasionally.
Makes
2 quarts.
