Ingredients
2 Tb. olive oil
2 Tb. crushed garlic
1 28 oz.-can of crushed Italian plum tomatoes
1 14 oz.-can of Tomato Sauce
˝ tsp Marjoram
1 tsp Basil
1 tsp OreganoThis pizza
sauce is not for the faint at heart! Place the oil in a
skillet on medium heat. When the oil begins to look
transparent, add the garlic and stir for a minute until
lightly brown. Now add the spices and remember, you are making
a flavored oil here more than just throwing some stuff that
sounds good.
Once the herbs have soaked up
all the oil, add the tomatoes and sauce. Reduce heat to medium
low and stir every 5 minutes or so (the secret of a great
sauce). Make sure flatten and break apart the tomatoes as
you’re cooking down the sauce. Cook slowly for one hour and
cool.
This sauce can be made ahead
of time and frozen until needed.
